By carefully monitoring the conditions inside of barrels or oak containers such as new oak, bourbon, sherry, port and others, we can help control and modulate the flavors imparted on the base spirit. Temperature, humidity, alcohol content, toast/char level, and the interactions between natural vapor or liquid phases of the distillate are accessed and modified in real time. This process brings out the desired flavors, such as sweetness from sherry barrels or tropical fruit notes from rum casks, and integrates them in a balanced manner. By working to maintain these optimal conditions, we can carefully craft spirits with tailored flavor profiles and aromas to meet the requirements of our customers.
