A New Approach – Our Process


Traditional barrel aging of spirits involves taking distilled liquor and storing it in wooden casks for up to 40+ years. During this time, a number of chemical reactions take place that develop the characteristic flavors and aromas of whiskey and other brown spirits. The entire maturation process involves hundreds of different, individual reactions occurring constantly inside of the barrel.

Our patented process combines traditional whiskey-making techniques with a proprietary finishing technology to create complex and unique flavor profiles that are typical of spirits matured for a much longer length of time. These products are…well…old beyond their years.

Pushing Flavor Reactions


Our proprietary process optimizes the extraction of specific oak compounds, creating tasting notes like vanilla, cinnamon, almond, and oak. It simultaneously pushes flavor reactions, such as the creation of fruity, aromatic esters, to completion. The end result is a customizable, mature tasting spirit that can provide substantial cost savings compared to other suppliers.
